We are driven by the desire to make the most of the produce available in the West Indies in recipes that are both typical and creative.
We like to cook every day, we like to imagine new recipes while remaining faithful to the tastes of Creole cuisine, we like to research, deepen our knowledge and strive for excellence. This quest for excellence is our "leit motiv" and our primary requirement.
If we could sum up our approach, here are our 5 principles that apply to both the recipes on the blog and in our workshops:
- Cook as much fresh produce as possible, and make the most of what's in season
- Managing gourmet recipes, constantly reinventing ourselves without going overboard;
- Offer you the right portions;
- Cook with just the right amount of fat;
- Offer you recipes illustrated step by step and detailed to the gram.
Finally, because our job doesn't stop at dreaming up recipes, we also share our advice, analysis, expertise and discoveries.
